Creating Traditions
For those that have gotten to know us, you already know we love traditions and creating memories with those around us. Many of you have heard stories about our pizza nights, Skally Olympics, and Turkey Bowl, just to name a few.
With Father’s Day approaching, it felt like the right time to share another tradition with you!
I still have such a vivid memory of my Dad cooking Sunday breakfast. Every week he made one of two options… Swedish pancakes or pannekoeken (sometimes spelled panakuken).
For many years, I've been making Swedish pancakes but the pannekoeken was a different story. One day, I decided I wanted to recreate that Sunday treat for my family and went searching the internet for a recipe to try. I was so happy to find this recipe on Cook’n and wanted to share it with you...
Dutch Pannekoeken
Ingredients:
1/4 cup butter
3 large eggs
1/8 teaspoon salt
3/4 cup milk
3/4 cup flour
Directions:
Place the butter in a pannekoeken pan or an ovenproof skillet with rounded sides. Preheat your oven to 425 degrees. Put the rack in the center, not the top, shelf. When you turn the oven on, place the pan with the butter in the oven. When the oven reaches 250 degrees the butter should be melted. Remove the pan from the oven. Whisk the eggs and the salt in a medium bowl. Add the milk. Whisk in the flour until nearly smooth. Your batter is now ready. Pour the batter into the pan.
Bake for 15 to 18 minutes or until the top starts to turn golden brown. Serve hot with your favorite syrup.
We look forward to seeing what traditions our kids decide to carry on and incorporate as they leave the nest and start their own families. I know those Sunday breakfasts are wonderful memories and I’m glad we get the opportunity to share a bit of my Dad with our boys since they never got to meet him.
